Completing a cut sheet for the butcher can be confusing and overwhelming. Some cuts are only available if you choose other cuts. We have taken the guesswork out of the cut sheet by creating packages that will help you better decide which works best for you and your family.

 

We currently have 3 packages available. By choosing one of our packages, you will still end up with the same amount of meat if you were to complete the cut sheet yourself, except without the added stress. :)

 

These packages are based off of a whole hog share. If you are purchasing a half hog share, you will receive half the amount of cuts listed. Please note that you may receive more or less than what is listed. We cannot give an accurate amount because weights of hogs vary.

 

Package Options

Standard Package - this package includes standard cuts and is best for splitting with another person or for minimal leftovers 


4 boston butt, 2-3lb roasts
4 picnic roasts, 2-3lb
~20 packs boneless pork chops, 1" thick, 2/pack
2 pork loins
2 tenderloins
2 packs spare ribs
2 packs baby back ribs
~20 packs bacon, cured, sliced, 1lb packs
5-6 hams, 3-4lb roasts, cured
2 shanks
2 jowls, cured, sliced
~20lb sausage, 2 flavor choices (choose two: loose, patties or links), 1lb packs
2 packs fat back
2 packs leaf lard
saved bones (varies)

Half hog: divide amounts by 2
*only 1 flavor choice and option for sausage

 

 

Fresh Package - this package includes standard cuts without curing, leaving you the option to use your own seasonings for curing


~20lb sausage, 2 flavor choices (choose two: loose, patties or links), 1lb packs

Fees set by Processor

*Subject to change at any time without notice*

Harvest (Kill fee) = $75.00/hog ($37.50 for half hog)

Processing = $0.75 per pound of hanging weight

Sausage links or patties = $1.00 per pound (additional)

Curing = $2.00 per pound (additional)
