Ingredients

  • 1 pound Edwards Family Farms cheddarwurst links
  • 1 1/2 pounds potatoes, washed and diced into 1-inch cubes
  • 1 large onion, finely chopped
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup cheddar cheese, shredded
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Cheddarwurst:
    • In a large oven-safe skillet, heat olive oil over medium heat.
    • Add cheddarwurst links to the skillet and cook for about 5 minutes, turning occasionally, until they are browned on all sides. Remove the cheddarwurst from the skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add chopped onions and bell pepper. Sauté for 3-4 minutes until the vegetables are softened.
    • Add minced garlic, dried thyme, and smoked paprika. Stir and cook for an additional 1-2 minutes until fragrant.
  4. Add Potatoes:
    • Add the diced potatoes to the skillet. Season with salt and black pepper.
    • Cook for 8-10 minutes, stirring occasionally, until the potatoes start to brown and become tender.
  5. Combine and Bake:
    • Nestle the cooked cheddarwurst links into the potato and vegetable mixture in the skillet.
    • Sprinkle shredded cheddar cheese over the top.
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the potatoes are fully cooked.
  6. Garnish and Serve:
    • Remove the skillet from the oven carefully (handle will be hot).
    • Garnish with chopped fresh parsley.
