Ingredients

  • 1 package (4 links) Edwards Family Farms cheddarwurst sausage
  • 4 medium-sized potatoes, washed and diced
  • 1 onion, thinly sliced
  • 1 bell pepper (any color), sliced
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Ingredients
    • Preheat the oven to 400°F (200°C).
    • Cut the cheddarwurst sausage links into bite-sized pieces.
    • Wash and dice the potatoes, thinly slice the onion, slice the bell pepper, and zucchini.
  2. Sauté Sausage
    • Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.
    • Add the cheddarwurst sausage pieces to the skillet and sauté until they are browned on all sides. This should take about 5-7 minutes.
    • Once browned, remove the sausage from the skillet and set it aside.
  3. Cook Vegetables
    • In the same skillet, add another tablespoon of olive oil.
    • Add the diced potatoes and cook for about 5 minutes, stirring occasionally, until they begin to brown.
    • Add the sliced onion, bell pepper, zucchini, and minced garlic to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.
  4. Combine and Season
    • Return the cooked cheddarwurst sausage to the skillet with the cooked vegetables.
    • Sprinkle dried thyme, paprika, salt, and pepper over the mixture. Stir to combine all ingredients evenly.
  5. Bake in the Oven
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the potatoes are fully cooked and have a golden brown exterior.
