Ingredients

  • 2–3 lb Edwards Family Farms whole pork belly
  • 1/3 cup pure maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper (optional, for a little kick)
  • 1/2 teaspoon salt

Steps

1. Preheat the Oven
Set your oven to 300°F (150°C). Line a baking sheet with foil and place a wire rack on top.

2. Prepare the Pork Belly
Pat the pork belly dry with paper towels. Score the fat in a crosshatch pattern, about 1/4 inch deep.

3. Make the Maple Glaze
In a small bowl, whisk together the maple syrup, brown sugar, soy sauce, garlic powder, smoked paprika, black pepper, and salt.

4. First Bake & Glaze
Place the pork belly on the wire rack, fat side up. Brush half of the maple glaze over the pork belly. Cover loosely with foil and bake for 2 hours.

5. Flip & Reapply Glaze
Remove the foil and flip the pork belly. Brush with more glaze and return to the oven. Increase the temperature to 375°F (190°C).

6. Final Glaze & Crisp
After 20 minutes, flip the belly back to fat side up and brush with the remaining glaze. Bake for another 20–30 minutes, until the glaze is caramelized and the fat is crispy.

7. Rest & Serve
Let the pork belly rest for 10 minutes before slicing into thick strips or cubes.
