Lately, I’ve been stuck in a bit of a breakfast rut, especially when it comes to feeding my kids something that’s quick, healthy, and packed with protein.

I needed some inspiration, so I reached out to my community for ideas. The response was fantastic, and now I have a handful of delicious, protein-rich breakfasts to share with you! 

These meals have quickly become favorites at our house, and the best part is they’re easy to whip up and packed with nutrients.

Here are five of our go-to protein-packed breakfast ideas to start the day on a strong, energized note.

1. Sausage & Sweet Potato Breakfast Hash

This one’s perfect for little hands and is naturally sweet, thanks to the sweet potato. It's balanced with hearty sausage for protein.

Ingredients:

Instructions:

  • In a skillet, cook the sweet potato for about 5-7 minutes until soft.
  • Add the crumbled sausage and scrambled egg, stirring to combine.
  • Season with salt and pepper and serve.

2. Chicken & Cheese Breakfast Wrap

Wraps are always a fun way to make breakfast a little more exciting! You can customize this with any cooked chicken you have on hand.

Ingredients:

  • 1 small tortilla
  • 1/4 cup cooked, shredded chicken from Edwards Family Farms (any kind of chicken will do)
  • 1/4 cup shredded cheese
  • 1 tablespoon Greek yogurt (optional for a creamy texture)

Instructions:

  • Spread a bit of Greek yogurt on the tortilla if desired.
  • Add shredded chicken and cheese, then roll it up.
  • Heat in a skillet until the cheese melts, then slice into pieces for easy eating.

3. Beef & Egg Breakfast Tacos

These mini tacos are loaded with flavor and perfect for a protein boost. They’re customizable with any favorite toppings, too!

Ingredients:

Instructions:

  • Fill the taco shell with cooked beef, scrambled egg, and cheese.
  • Fold in half and warm in a skillet until the cheese melts.
  • Cool slightly and cut into small pieces for easy handling.

4. Bacon & Veggie Egg Cups

These egg cups are perfect for a hearty, hand-held breakfast. I love that you can mix in veggies for extra nutrition!

Ingredients:

Instructions:

  • Preheat oven to 350°F. Line a muffin tin cup with a slice of bacon to form a “cup.”
  • Add diced veggies to the bacon cup and crack an egg over the top.
  • Bake for 15-20 minutes or until the egg is fully cooked.

5. Chicken Sausage & Apple Breakfast Bites

These sweet and savory bites are simple and delicious with sliced apples and chicken sausage.

Ingredients:

  • 1 small chicken sausage link, sliced
  • 1/2 apple, diced
  • 1 tablespoon butter or coconut oil

Instructions:

However, in my years of experience and research, starting the day with a protein-packed breakfast helps keep energy levels steady, reducing that mid-morning crash.

Protein provides sustained fuel, keeps you fuller longer, and is essential for muscle and tissue growth—important for growing kids and busy adults alike! 

A breakfast rich in protein also supports cognitive focus, which helps kids stay attentive at school and adults stay sharp throughout the day.

Especially when that protein comes straight from the farm.
