There's nothing quite like cooking over an open flame when you're camping – and when the food’s as easy and delicious as these pork skewers, you’ll feel like a campfire pro!

This recipe is super adaptable, making it perfect for everything from lazy summer nights to crisp fall camping trips.

Why Pork Skewers and Foil Packets?

Let’s face it – camping is about keeping things simple without sacrificing flavor. These pork sausage and veggie skewers (or foil packets if you prefer) are quick to prep, easy to cook, and loaded with flavor.

Plus, they're customizable: choose your favorite veggies, pick a few herbs, and you’re set for a tasty campfire meal.

The Recipe: Campfire Pork Sausage & Veggie Skewers

These skewers pack a punch of flavor with minimal effort, making them a go-to for outdoor adventurers.

Ingredients:

  • 1 lb Edwards Family Farms pork sausage, cut into 1-inch pieces
  • 1 bell pepper (any color), chopped into large pieces
  • 1 red onion, cut into large chunks
  • 1 zucchini, sliced into thick rounds
  • 8 oz mushrooms (optional, but highly recommended)
  • Salt, pepper, and dried herbs (like rosemary or thyme) to taste
  • Olive oil for drizzling

Instructions:

  1. Prep Your Skewers: Thread the sausage pieces, bell pepper, onion, zucchini, and mushrooms onto metal or pre-soaked wooden skewers. Keep it colorful and fun!
  2. Season: Drizzle a bit of olive oil over the skewers, then sprinkle with salt, pepper, and any herbs you love. Rosemary and thyme are my go-tos for a smoky, herbal kick.
  3. Grill or Fire Cook: Place the skewers over medium-high heat and grill for about 10–12 minutes, rotating every few minutes to get a nice char on each side. You’ll know they’re ready when the sausage is browned and cooked through, and the veggies are tender.
  4. Serve & Enjoy: Eat them right off the stick or slide them onto a plate with a side of campfire potatoes or bread.

Bonus: Foil Packet Alternative

If skewers aren’t your thing, try making this meal in foil packets instead. Here’s how:

  • Assemble & Season: Place sausage and veggie chunks on a large piece of foil, drizzle with olive oil, and season.
  • Wrap & Cook: Seal up the foil tightly, then cook over the campfire or grill for about 20–25 minutes. Carefully open and enjoy right from the packet!

Pro Tips for Campfire Cooking:

  • Prep Ahead: Chop veggies and pre-season the sausage before you leave home. This way, you’ll just have to assemble and cook at the campsite.
  • Bring Tongs: Trust me, they make turning the skewers (or flipping foil packets) over a campfire much easier!
  • Double Up on Skewers: For thicker cuts, double-skewer the sausage and veggies so they’re easier to flip and won’t spin around.

These pork sausage skewers and foil packets are a campfire game-changer – easy to cook, packed with flavor, and customizable for everyone’s tastes.

Perfect for your next camping trip, backyard hangout, or cozy evening around the fire.
