- 1 tbsp onion powder
- 1 tsp black pepper
- 1 tsp salt
- 1 whole pineapple, peeled & top removed (but save for later)
- 1.5 cups chicken broth
- At least 2 skewers or kitchen twine
Steps to Deliciousness on the Grill:
- Preheat your grill to medium heat. Remove the membrane from the back of the ribs for better tenderness. In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Rub this mixture all over the ribs.
- Stand the pineapple upright on a pan line with aluminum foil (enough to wrap the whole thing). Carefully wrap the ribs around the pineapple, securing them with skewers or kitchen twine to keep them in place. If using skewers, place them 1/4 of the way from the top of the pineapple. Wrap your masterpiece with aluminum foil. Add chicken broth over top the pineapple.
- Place the rib-wrapped pineapple on the grill, standing upright. Grill for about 1.5 - 2 hours, basting occasionally with BBQ sauce, until the ribs are tender and cooked through. Rotate the pineapple occasionally to ensure even cooking.
