Recipe for DIY Pork Skins (Chicharrones)

Ingredients:

  • 1 lb pork skin (with fat attached, if possible)
  • 2 cups water
  • 1 tbsp salt
  • 1 tbsp vinegar (optional for extra crispness)
  • Oil for frying (vegetable or lard)

Instructions:

  1. Prep the Skin:
    • Cut the pork skin into small squares or strips. Score it by making shallow cuts along the skin to help it crisp up evenly.
  2. Boil the Skins:
    • In a large pot, add the pork skin, water, salt, and vinegar (if using). Bring to a boil and simmer for about 1-1.5 hours, until the skins are tender.
  3. Dry Out the Skins:
    • After boiling, drain the pork skins and pat them dry with paper towels. For extra crispness, you can let them sit out to air-dry for an hour or so.
  4. Fry the Skins:
    • Heat oil in a deep pan to around 375°F (190°C). Fry the pork skins in batches, ensuring they're not overcrowded in the pan.
    • Fry for 3-5 minutes or until golden brown and crispy. They’ll puff up when frying.
  5. Drain & Season:
    • Remove the pork skins from the oil and place them on paper towels to drain any excess oil.
    • Season with a pinch of salt or your favorite seasoning blend (garlic powder, chili powder, etc.).
  6. Enjoy:
    • Serve your crispy, crunchy chicharrones as a snack or with your favorite dipping sauce!

Tip: You can also bake the skins after drying them out for a healthier version. Just bake them at 400°F for about 20 minutes until crispy!
