The Recipe: How to Make Delicious Beef Jerky at Home

Ingredients:

To start, here’s what you’ll need:

  • 1-2 lbs Edwards Family Farms grass fed London broil, thinly sliced against the grain (about 1/8 inch thick)
  • 1/4 cup soy sauce (for umami depth)
  • 1/4 cup Worcestershire sauce (adds a tangy, savory layer)
  • 1 tbsp honey or brown sugar (optional, for a touch of sweetness)
  • 1 tsp garlic powder (for an aromatic kick)
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional, for a smoky flavor)
  • 1/4 tsp red pepper flakes (optional, for a little heat)

Step-by-Step Instructions:

  1. Prep the Meat: Start by placing your London broil in the freezer for about an hour. This step makes it easier to slice thinly – which is key to good jerky. Slice the meat against the grain, around 1/8 inch thick. Slicing against the grain keeps the jerky tender and easy to chew.
  2. Mix the Marinade: In a large bowl, mix together soy sauce, Worcestershire sauce, honey (or brown sugar), garlic powder, onion powder, black pepper, smoked paprika, and red pepper flakes. Adjust the seasonings to fit your taste.
  3. Marinate: Add your beef slices to the marinade, ensuring each slice is coated. Cover and refrigerate for at least 4 hours, but if you can, let it marinate overnight. The longer the meat marinates, the more flavorful your jerky will be.
  4. Dry the Meat: When ready, take the beef out of the marinade and pat it dry with paper towels to remove excess moisture. This will help the jerky dry out faster.
  5. Dehydrate: Now, you can either use a dehydrator or your oven:
    • Oven Method: Preheat your oven to its lowest setting (usually around 170°F). Place the beef strips on a baking rack over a baking sheet and prop the oven door open slightly to let out moisture. Bake for 3-4 hours or until the jerky is dry but bendable.
    • Dehydrator Method: Set your dehydrator to 160°F and dry the beef for 4-6 hours, checking until it reaches your desired texture.
  6. Cool and Store: Let the jerky cool completely before storing it in an airtight container. Properly dried jerky can last up to two weeks at room temperature, or longer in the fridge.

Tips and Tricks for Perfect Jerky

  • Slicing Tips: Freezing the meat slightly makes it much easier to slice thinly and evenly. Thin slices ensure that the jerky dries uniformly.
  • Marinate Long Enough: To get that deep, savory flavor, let your beef marinate at least 4 hours – or even better, overnight.
  • Dry it Right: The texture is everything. You’ll know your jerky is done when it’s firm, dry to the touch, and bends without snapping.
