What To Expect With Our Farm Fresh Eggs: A Letter

Dear egg customer,

We are so excited you are receiving our farm fresh eggs. There is nothing like a fresh egg! 

If you have never had them before, prepare to never return to store-bought eggs again. Sorry, not sorry. :)

Our number one goal is to provide the best stewardship possible to our livestock while providing a prime product for you and your family.

In order to provide this high quality product, it’s important to understand the egg and the service we provide to our flock. Allow me to share everything about our excellent and delicious farm fresh eggs.

Egg Color & Size

Chicken eggs come in a variety of colors: blue, mint, olive, beige, dark chocolate, brown, a reddish hue, and even pink.  Regardless of the shell color the eggs have the same flavor and nutritional benefits. Unfortunately, eggs that are dark chocolate, do not have a chocolate flavor. However, they are one of the most loved by our customers.

Our eggs are ungraded which means you will see a variety of sizes in your carton. From jumbo to petite, our eggs come in all shapes and sizes. Embrace the diversity and enjoy the uniqueness of each egg – whether it's perfect for frying or fits snugly in your hand.

Yolk Color

Unlike store-bought eggs, the yolks from our farm fresh eggs are richer in color. The flocks have the opportunity to consume greens and bugs on pasture, food scraps from our kitchen, and even items out of the garden.

Washed or Unwashed?

Your eggs are unwashed with the bloom intact.

What is a "bloom"? 

The bloom (aka the cuticle) on an egg is the protective layer that seals the eggshell to prevent unwanted bacteria from entering the egg. The bloom also helps to reduce moisture loss from within the egg, keeping it fresher longer.

Additionally, fresh eggs may arrive at on your doorstep with mud, dirt, and maybe a little poop on them. Roll with this, this is truly a farm FRESH egg. Simply wash your eggs with water prior to using them.

You can store your unwashed eggs on the counter to last anywhere from 2-4 weeks.

You can store your unwashed eggs in the fridge to last anywhere from 4-6 months.

If you choose to wash your eggs, use water about the same temperature as the egg, dampen a paper towel and gently wash the shell. Pat dry and use or refrigerate immediately.

Oddities

We do not candle our eggs. Candling is when we view the contents inside the egg with a light. This means we cannot guarantee your eggs will be free from the following:

  • Double yolkers: Lucky you! While it's not an everyday occurrence, finding two yolks in one egg is like hitting the jackpot. It's a fun little surprise that makes breakfast even more exciting!
  • Egg within an egg: Crack an egg to find another full egg within it. Sometimes these hens do the darndest things.
  • Blood or meat spots: Although rare, you might spot tiny red or brown spots on the egg yolk or white. These blood spots occur when a small blood vessel ruptures during the egg's formation and are completely harmless. Simply remove them before cooking, or embrace them as a natural quirk of farm-fresh eggs.
  • A hairline fracture: While we do not pack eggs that are broken or cracked, we are human and could easily miss a hairline fracture. This can cause the inside of the egg to go bad. If this happens, please let us know and remember to give us grace.
These ‘conditions‘ are the true reality of farm fresh eggs. It is best to crack eggs individually into a separate bowl prior to using them.

Other oddities you may find with our farm fresh eggs:

  • Bumpy shells: This is a bump in the reproductive system (see what I did there) caused by a calcium build up and is safe to consume.
  • Oblong or misshaped eggs: Caused by random quirks in a hens reproductive system causing that egg to be misshaped. Don't worry – they may not be perfectly uniform, but they're still packed with the same deliciousness!
  • Nature's artwork: Keep an eye out for eggs with beautiful patterns or swirls on their shells. Mother Nature loves to get creative, and you might just stumble upon a work of art in your carton
  • Speckled shells: Don't be surprised if you spot some speckles or freckles on our eggs' shells! These little marks are totally normal and just add to the charm of our farm-fresh delights. We have hens that lay these specific eggs and we think they are the coolest!
  • Wrinkled shells: Nope, the egg is not getting old. It's just a sign that the eggshell formed at a slightly slower pace. Despite its appearance, the egg inside is still fresh and delicious!

Feed and Supplements

In addition to their layer feed, we provide our hens with natural supplements each day like grit, oyster shells, black oil sunflower seeds, oregano and apple cider vinegar.

Because our hens are raised on pasture, they have plenty of fresh greens, bugs, berries, nuts to consume which produces a much healthier egg for you.

Humanly Raised (What this truly means)

Because our hens are on pasture, they have access to sunshine, rain, snow, wind and a buffet of fresh greens and bugs. Yup, you guessed it - chickens are actually omnivores. They will devour each other if we are not careful. 

That is why they have to have their beaks cut off when they live in confinement. Otherwise, they do not have enough space and will start to attack each other.

Our hens have a pecking order and have no problem putting another hen in her place, but we do not have to debeak because they have plenty of space to call their own.
