Instant Pot Cajun Red Beans and Rice with Sausage and Ham Hocks
Quick and easy authentic Cajun recipe.

Ingredients

  • (2 Tbsp) olive oil
  • (1, smoked) Pork Ham Hocks
  • (1) onion, medium, chopped
  • (1) bell pepper, chopped
  • (1 cup) celery, chopped
  • (1 Tbsp) garlic, minced
  • (1 tsp) thyme, dried
  • (1 tsp) oregano, dried
  • (1 1/2 tsp or to taste) Cajun seasoning
  • (1 tsp or to taste) salt
  • (1 tsp or to taste) black pepper
  • (4 cups) chicken broth
  • (2) bay leaves
  • (3, 15.5 oz cans) red beans, drained (red kidney or small red)
  • (4 cups) rice, cooked (for serving)
  • (1 lb) Andouille sausage, sliced

Directions

  1. Add the oil to the pot and set to sauté
  2. Brown Andouille sausage, about 5 minutes, then set aside
  3. Add onion, bell pepper, celery, and garlic. Sauté until onion is soft and translucent, about 5 minutes
  4. Stir in thyme, oregano, Cajun seasoning, salt, and black pepper
  5. Deglaze the inner pot, with broth if needed, scraping up any brown bits
  6. Stir in remaining broth
  7. Add the red beans and ham hock
  8. Float bay leaves on top
  9. Pressure cook on high pressure for 30 minutes
  10. Natural pressure release
  11. Remove the ham hock and shred or chop it into bite-sized pieces
  12. Return ham hock and reserved Andouille sausage to the pot
  13. Turn on the sauté mode and allow the beans to thicken, about 5 minutes, stirring occasionally, mash beans if desired
  14. Serve over white rice
  15. Add hot sauce to taste
