Ingredients

  • (1, cut into pieces) Chicken, Whole (large)
  • (1 can (14 oz)) coconut milk
  • (2 Tablespoons) Thai red curry paste
  • (2 Tablespoons) fish sauce
  • (1 Tablespoon) brown sugar
  • (1) red bell pepper, sliced
  • (1) yellow bell pepper, sliced
  • (1) onion, thinly sliced
  • (2) garlic cloves, minced
  • (1 Tablespoon) grated fresh ginger
  • (garnish) fresh cilantro
  • (for serving) cooked rice

Directions

  1. Heat a large skillet or wok over medium-high heat. Add the curry paste and cook for 1 minute until fragrant.
  2. Stir in the coconut milk, fish sauce, and brown sugar. Bring to a simmer.
  3. Add the chicken pieces to the skillet along with the bell peppers, onion, garlic, and ginger. Stir to combine.
  4. Cover and let it simmer for about 20-25 minutes until the chicken is cooked through and the vegetables are tender.
  5. Taste and adjust seasoning if necessary.
  6. Serve hot over cooked rice, garnished with fresh cilantro.
