- (1, cut into pieces) Chicken, Whole (large)
- (1 can (14 oz)) coconut milk
- (2 Tablespoons) Thai red curry paste
- (2 Tablespoons) fish sauce
- (1 Tablespoon) brown sugar
- (1) red bell pepper, sliced
- (1) yellow bell pepper, sliced
- (1) onion, thinly sliced
- (2) garlic cloves, minced
- (1 Tablespoon) grated fresh ginger
- (garnish) fresh cilantro
- (for serving) cooked rice
Directions
- Heat a large skillet or wok over medium-high heat. Add the curry paste and cook for 1 minute until fragrant.
- Stir in the coconut milk, fish sauce, and brown sugar. Bring to a simmer.
